Again....Andrea knows how great a recipe will be just by reading it! Spicy burger with a cabbage slaw (I don't even like cabbage...) the potatoes were great as were the veggies....I asked her for the recipe....I guess you know it's good when they won't share the recipe!
This is the beginning layer of one of my newest, favorite appetizers.....cooking club...be ready, we are making this for our club at my house this June!
Voila....crab towers!
Shrimp Provencale....a wonderful Lenore appetizer. The stuffing can be made
in bulk and frozen so that when unexpected guests pop in you have a phenomenal
appetizer!
Chef Claudia brought this recipe.....very low cal and low carb....very high on flavor, however, she is yet to share the recipe with me! Broccoli, cheese and chicken casserole. It was incredibly good and very low cal, those two usually don't mix.....

We prepped the Mahi Mahi with a bit of salt and pepper, rubbed with olive oil and then rubbed with a combo of oregano and curry powder and left to sit for at least 30 minutes....when a recipe calls for a fish to be skinned, always let your fish monger do it, I probably lost 20% of the fish doing it myself.
Jasmine rice with lots of cilantro and chipotle...
Final plating of the MahiMahi...

This is my handsome young boy at 10 1/2 months...there is no way he was
going to tolerate antlers or a hat...he's a 'guy' dog and doesn't do that!
This was the grande finale at my office Christmas party....the greeting is resting on a sleigh of chocolate that was filled with cheesecake...I loved it!

All right....all right...nothing to do with food ....but this is Kiko's evaluation with a world famous judge, Fred Lanting....and he did really well....
now this is a work of art....not that anyone could fit another morsel of food in them!
the turkey....when it was finally COOKED!...was delicious. We brined it in an apple cider based brine...I'll try this again next year...Please note that some thermometers are meant to be inserted when the bird is COLD and some are "instant read" that can be inserted at any time....lesson learned
the beginning of an incredible dish.....and the end...a microwave gone wild!
this is some of the lunacy that I truly miss....
You would think that Kiko did the cooking!
I loved this presentation...gazpacho in a shot glass with a lime poached shrimp...delicious....healthy...and low cal! go figure....
Aimie's famous and absolutely delicious butternut squash bread!

Sauteed halibut on a cucumber sauce with a spicy tomato salsa....first time I have had halibut....liked it but wasn't my favorite fish...
